I just got your new book Eat What You Love today after purchasing it on QVC on Valentine’s Day (a little gift to myself!). I LOVE it already! The recipes look great and the photographs are beautiful. I also really like that the “points” already figured out and that you included both the grams of carbohydrate and sugar.
My husband’s birthday is coming up and I thought I would make him your Unbelievable Chocolate Layer Cake. I heard you say on-air that you doubled the recipe and did the same for the Chocolate Whipped Cream Frosting, but am wondering what size round pans you recommend. Also, do I cook the round layers the same length of time as the recipe specifies for the single layer 8 X 8-inch cake?

Thanks for watching and congratulations for being one of the first to receive my new book. And a happy, happy birthday to your husband! The Unbelievable Chocolate Cake is one of my husband’s favorite recipes.
I most often bake the cake as a single layer. To make it festive, I lightly dusting the top with powdered sugar just before serving it (it only takes 2 teaspoons that I shake through a fine mesh strainer) and then top each piece with fresh sliced strawberries and a dollop of light whipped topping, yum.
For the larger layer cake simply double the cake recipe and pour it into two 9-inch round pans that have been coated with baking spray and yes, bake according to the same directions (18 to 20 minutes at 350ºF, or until the center of the cake springs back when lightly touched). Because the cake has less sugar, it bakes quicker than most cakes so keep an eye on it June to avoid overbaking it. When cooled, fill and top the layers with Chocolate Whipped Cream Frosting.
